History 

Cauliflower first originated in ancient Asia Minor but has undergone numerous transformations. This vegetable was quite popular in Europe, more so in France during the 16th century. It was in late 1600s, cauliflower was introduced in North America for the very first time. This vegetable was well accepted in the court of popular Louis XIV. Cauliflowers were also loved in Brittany in mushrooms, veal and sweetened stews. The ancestry and history of cauliflowers trace back to wild cabbages and its appearance has similarities with that of collards and kale. Cauliflower was commercially available in America in the 1920s, despite it being mentioned in the early 1800s in American writings.

Purpose/Use

Presently, cauliflower is used in several dishes. People in Eastern Europe love thick cauliflower soups, while those in Sardinia enjoy salads made from cauliflower combined with garlic, capers and olive oil. On the other hand in India, this vegetable is popularly used in a curry prepared with potatoes and onions. Cauliflower is also used as stir fries, quiche, omelette, gratins as well as other casseroles. It can be consumed both raw as well as cooked (sautéed, steamed, boiled, baked or roasted). It can also be mashed or pureed. Cauliflower in certain recipes can also be used as an alternative for broccoli. Major cauliflower growers include France, China, United States and India. Many people have the tendency of throwing away cauliflower leaves but they are unaware of the fact that cauliflower leaves can be used for flavoring soups, stews and dips. It can be used as healthy finger foods, and most importantly it acts as an excellent source of nutrition. It contains hunger-controlling fiber and is rich in vitamins also.
